Today I thought would make some dahl as I had some sweet potatoes in that had been lingering for a few days waiting to be used.I thought I would make a big batch so it could be used for the basis of a couple of meals over the next couple of days.I'm trying to get Ian and Sophie eating more meat free meals.
I didn't use an exact recipe just roughly up scaled the usual ingredients to combine with 500g of green lentils. I put the lentils into a pan and covered with a tin of chopped tomatoes and boiling water, then boiled it for the required ten minutes. After the important initial boil I then transferred everything to the remoska,along with more tomatoes, peeled and cubed sweet potatoes, diced onions,and coconut milk .Then I heated a little oil in a frying pan and popped some cumin seeds,and cardamom pods,I added a little bit of garlic,some dried chillis,some ginger and a bit of garam masala. This was then added to the remoska with everything else and left to simmer whilst the lentils softened,onions and sweet potatoes cooked, and the different layers of flavours developed.The smell was delicious.I gave it an occasional stir and added some spinach leaves at the end of the cooking time, they wilt in no time so don't need a long simmering. Jake loves it when sweet potatoes are on the menu as he likes to chew on raw pieces, he also loves raw turnips, strange dog.
We'll be having this tonight with some more spinach leaves, rice and some naan bread. I am not a curry lover but I do like the subtle and warming flavours of Indian spices,lovely for tonight's evening meal after our long walk through the woods with the dog.

This is the basic recipe I started with but as usual I mixed things up a little and changed the overall quantities to bulk cook.
Anybody got any favourite tasty meat free meals using beans or pulses for me to try?

ReplyDeleteWe made a roast vegetable curry tonight - with a squash, parsnips, celeriac, carrots, cabbage, mushrooms, fennel, ginger, onions & garlic. Then we chucked in yesterday's lentil casserole, a few beansprouts & a variety of spices & served it with brown basmati. We have lots of recipes & promise to post them soon!
